Grilled Cheese Reuben Sandwich

Nothing is better than an oogey, gooey cheesy sandwich. I live by the motto: the more cheese, the better. Here’s a quick and easy way to whip up a reuben sandwich, with a special trick to make the cheese extra melted. 

I made this like any basic Reuben Sandwich. If you have left over corned beef, what else are you going to do with it? The trick with any grilled cheese sandwich is to completely cover the sandwich when on the pan. (I cannot take credit for this. I learnt this trick from watching The Sandwich King on the Food Network buy it really does work.) After placing the sandwich on a hot frying pan, cover the entire sandwich with a medal bowl. Be sure to use tongs when removing the bowl because it is going to be HOT.

Grilled Cheese Reuben Sandwich

Ingredients:
Corned Beef
Swiss cheese
Rye bread
Thousand Island dressing
Sauerkraut
Butter

Directions:
1. Place frying pan over a medium flame so it can heat up.
2. Build your sandwich: First spread thousand island dressing on two slices of rye bread. On one slice, pile corned beef, swiss cheese and sauerkraut. Use as much or as little as you like. That’s the beauty of a sandwich, you can do whatever you want!
3. Butter each side of the sandwich and place on the frying pan. Cover entire sandwich with medal bowl. After about 3 minutes check sandwich. (Don’t forget to use your tongs, the bowl will be hot!) When bottom slice is golden brown flip over and once again cover with medal bowl. Once other side is golden brown, your sandwich is done.
4. Cut sandwich in half and enjoy!
